With this heat, I am not crazy about cooking. I try to keep it as light as possible. Often times I end up eating dips or salsas. I know it’s not healthy but I find it refreshing. Anyway I cannot buy store bought salsa so I make my own.
- 1 tbs of minced Elephant garlic ( I am allergic to regular garlic)
- 1 can (10 oz) of diced tomatoes with jalapenos.
- 1 large avocado
- 2 tbs sour cream
- 2 tbs of grated Parmesan
- 2 tbs of lemon juice
Mash up avocado, put everything into a bowl and stir. I serve this with pita chips as I can?t eat corn

Fair warning these muffins are on the healthy side. If you are looking for something to satisfy your sweet tooth, this is not it! I enjoy these with my morning coffee. They are full of fiber and give me plenty of energy.

½ cup of packed brown sugar
